Nimak paras are a desi appetizer which is mainly from Subcontinent. They are known by different names like nimak paray, nimko and nimki. They are eaten as a snack with tea or when you are hungry. They are light, salty and flaky in texture. You can also add sugar to make them sweet. It is quite cheap and can be made within an hour.
Ingredients
Maida/All-purpose Flour 2 cups
Salt as
per your taste
Roasted Cumin Seeds 1 teaspoon
Ajwain 1 teaspoon
Water 1
cup or as required
Melted Ghee or Oil 3 tablespoons
Cooking oil for frying
Instruction
•
In a bowl, add all-purpose flour, salt, roasted cumin seeds,
ajwain and mix them with spatula.
•
Add ghee and mix well with hands. Mix till the mixture turns
sand like texture.
•
Now start kneading your dough with 1 cup water or as much as
you need to want a smooth and soft dough. Set it aside and let it rest for 30
mins.
•
After the dough has rested partition the dough into 3 or four
equal parts. The parts depend on how big of a flat bread you want to make.
•
Now make a dough ball by rolling it between your hands. And
make a flat bread out of the dough by using a rolling pin.
•
After the flat bread has been rolled out, take a knife, and
cut strips and again cut it into opposite direction. It will give a diamond
shape to the dough.
•
Place them in a tray and sprinkle some flour on it so they do
not stick.
•
Heat cooking oil in a wok. And one by one put the diamond
shape dough in the heated oil and fry until golden brown.
You
can serve these nimak paras in the evening at home with cardamom tea. Here is a
quick and easy recipe for the tea as well.
Preparation of Tea:
Ingredients
Tea
Tapal
Danedar or your favourite brand
Sugar
1
teaspoon or as per taste
Milk
1
cup
Cardamom
2 to 3 pods
Water ½ cup
Instructions:
•
Heat the ½ cup of water to the point of boiling and add 1 to
2 teaspoon of ground tea. You can also add as much tea if you want it stronger.
•
Add cardamom pods and let this simmer for some time so that
cardamom release its flavour.
•
Add 1 cup milk and use a ladle and blend it to aerate the tea
mix continuously. let it reach boiling point. Keep it on the stove, it will bubble.
•
Now add sugar to the tea as per your taste and take it off.
Strain it into a cup and enjoy it with your namak paras.
Note:
While
making tea always stand over it and keep an eye on it as it will bubble over
the rim of the pot. For namak paras, you can store the dough for up to 3 to 4
days. And you can also store the fried delicacy for up to 3 weeks in an
airtight container or put it in a brown paper bag and refrigerate it. But
airtight container is recommended.
