Raisin, Walnut Cookies and Chocolate Chip Cookies Recipe


Today I am going to be sharing two types of recipes in tis post as both the recipes are quite similar and you can make them at the same time. So, let us talk about our dish of the day. Chocolate is one thing that no one hates, even if someone does not love it but still eat it in various forms over the course of time. You can never say no to a good chocolate goody. Its time to give you the ingredients of the first type of cookie that is raisin walnut cookie:

Raisin walnut cookies

Ingredients:

All-Purpose Flour                                2 cups

Ground Oatmeal                                 2 & ½ cups

Granulated Sugar                                1 cup

Brown Sugar                                       1 cup

Unsalted Butter or Oil                        1 cup

Eggs                                                     2

Vanilla essence                                   1 teaspoon

Salt                                                      to taste

Baking Powder                                    1 teaspoon

Baking Soda                                         1 teaspoon

Raisins                                                 1 cup

Roasted & Chopped Walnut               ½ cup

Instructions:

·         Preheat your oven at 180 degree Celsius.

·         Take a bowl and add butter and sugar and whisk it until a soft and fluffy. Then add vanilla essence and eggs and combine the mixture well.

·         In a separate bowl combine the dry ingredients: flour, ground oatmeal, salt, baking powder and baking soda. Whisk them to form a uniform dry mixture and add raisins and already roasted and chopped walnuts to the dry mixture.

·         Combine both the dry and the wet mixture and mix the dough well. Line a baking sheet with butter paper and place the dough two inch apart using ice cream scoop and bake for 10 minutes or until golden brown.

·         After baking the cookies place them on a cooling rack for about 10 minutes and serve.

Chocolate chip cookies

Ingredients:

Unsalted Butter/Oil                                        1 cup

Caster Sugar                                                    1 cup

Brown Sugar                                                   1 cup

Eggs                                                                 2

Vanilla Essence                                               1 teaspoon

Baking soda                                                     1 teaspoon

Hot Water                                                       2 teaspoon

Salt                                                                  as per taste

All-Purpose Flour                                            2 cup

Chocolate Chips                                              2 cups

Roasted & Chopped Walnuts                          ½ cup

Instructions:

·         Preheat your oven at 180 degree Celsius.

·         Take a bowl and whisk caster sugar, brown sugar, and butter to form a light fluffy mix. Add 1 egg at a time (the eggs should be at room temperature) and then add vanilla essence to this mix.

·         Take 2 teaspoon of water and dissolve 1 teaspoon baking soda in it. Add this in the above mixture along with salt.

·         In a separate bowl sift all-purpose flour, chocolate chips and walnuts and combine together.

·         Now gradually add the dry ingredients to the wet mix and combine with hands to form a uniform and well mixed dough.

·         Line a baking sheet with butter paper and scoop the dough on the sheets 3 inch apart by using an ice cream scoop.

·         Bake for about 10 minutes or until golden brown. And transfer to a rack for some time to cool the cookies and serve.

Note:

in the recipe, I may have written oil as a substitute for butter, but oil will not give the same result as butter. So, butter is always preferred. Next thing is that you can store the dough for these cookies in a sealed container for about 2 weeks in the refrigerator. At the time of baking simply take it out and let it rest for an hour or two at room temperature and bake as said in the above recipes.
